Bacchuri (Bamboo shoots) an appealing vegetable; which goes complementary with numerous dishes


Bacchuri, known as Bashkurul in Bangla, is a popular and traditional dish among the indigenous people living in the Chittagong Hill Tracts. Now the food is well-liked by tourists as well as people living in cities.


Bacchuri can be prepared in a lot of ways. Indigenous people like to cook it with crab or Nappi, a paste made from dry fish. This vegetable also goes well with meat enhancing the taste and creating a unique flavor. Around Dozen, menus can be prepared with bacchuri.


Tender bamboo shoots are usually collected from mid-April to September. There are many kinds of bamboo species, and the taste of sprouts differs depending on the variety. Primarily the mitinga and muli species are preferred due to their unique taste. Other species taste bitter. Traders from Chattogram city buy bamboo shoots from Bandarban and sell them in the town.


Now the food has become famous and a favorite item to all the people; traders are worried about the bamboo crisis at some stage. For that, the wholesale trades of bamboo shoots need to be discouraged. The availability of bacchuri is decreasing as forests are disappearing.
